Do I need to send proof of income and co-sponsor form in with the i-129f or is it not required untill the interview?

The I-134 is presented at the interview, not with the I-129F.

So from the day I send the i-129f I have roughly 6 months to find a co-sponsor? Would getting a second job in that time also be accepted like if the second job was found a month before the interview would it still count as income even though it's only been a month since getting the second job?

Well, probably more like 7-9 months from I-129F filing to interview. But yes...you have until the interview to find a co sponsor.

Getting a second job can help. Although having it for only a month before the interview may or may have the income to be considered by the CO. They probably don't want to chance that the sponsor only got the job for immigration and won't actually keep it.
