Hello, I'm American and my wife has a green card that will expire very soon. I have to fill out the I-751 Application and provide evidence that our marriage is still going on. Would the following documents be enough to prove it: 

- birth certificates of our 2 babies

- jointly held bank account

- joint policies for insurance

- tax returns

It could be ok, but I would suggest going to the ROC forum and look at the pinned examples of evidence.  In general, the I751 (Removal of Conditions) requires quite a bit more evidence to show the validity of the marriage.  I know for us, we sent in the joint bank accounts, copies of joint credit cards, tax information, joint utility bills, car insurance, health insurance, copies of joint travel itineraries, copies of mailings we received jointly, etc.
