My husband has always crossed at the Detroit Ambassador Bridge by car....his I94 , if I search by his Passport number, goes back the last 5 years. It doesn't have his name or number anywhere on the paper that I printed out. First, is there a way to get a copy that has his info on it to send to the USCIS?

Second, is there a way to go back to 2005 when he first started coming to the US or will the last 5 years be acceptable?

If you do a screenshot of the page, it will show the passport number at the top.  Print out that screenshot.

You can file an FOIA with the Canada border to get exit/entry info which will list all travel dates going back as far as 10 years, if you wish to do this.  There is a 30 calendar day (including weekends) turnaround time for this info, however.  You can also file one with the US border, however the turnaround time is a bit longer since they process your request on business days only.
