We just got our I-129f approved and it is valid between 8/18/17-12/27/17. Now my income tax from last year is not enough, but I've been working since October of last year and making enough to be my fiancé sponsor. Should I still get a cosponsor? Or can I extend the validity time until next year, so my fiancé can show my income tax return on her interview. What other proof of income should I include. Thank you

What matters now is your 2017 current annual income. If it meets the poverty guideline for your household, you're all good and don't need a co-sponsor.

To prove your 2017 current annual income, you'll need to enclose a letter from your employer stating your position, whether it's permanent or not, how long you've been employed there and your annual income at that job PLUS your paystubs.

For my I-129F, K-1, AOS, EAD, AP and ROC detailed timelines, please refer to my timeline page :)

ROC filed on December 1, 2020, assigned to SRC, approved within 106 days on February 18, 2021.

My sincerest gratitude to all VJers, especially the late geowrian.

You mentioned to state how long I've been working. Is 1 year enough?

Actually, you can either get them to state when you started working there or the duration. The embassy won't judge you based on your duration of employment at the current company. However, it's good that you can prove consistent and steady stream of income for the past one year :)
