Neither USCIS nor the National Visa Center will review the affidavit. Just bring an updated I-864 to the visa interview along with a letter from his employer.

If his AOS met the poverty guidelines with his 2016 taxes then you don't need to worry about providing an updated affidavit.

Thank you for your reply! Yes we were done at NVC. Do you mean that i will just bring the old i 864 to my interview? Attaching the pay stubs and employment letter? No need to redone the part 6.1a and 1.a.1 Sponsor's Employment and Income On i 864 form?

No you MUST bring a new I-864 to interview.  If anything ever changes you must update it and bring a new one to interview.

You should provide pay stubs, and/or an employer letter stating what his position is and what his income is.

Depending on how he is paid, but generally for hourly employees you need: hrs per day x $ per hour x hours per week x 52 (weeks per year) = yearly income.
