Here is my evidence list, so please let me know, what you guys think :)

Copy of our DL showing same shared address
Joint finances:
Joint checkings/savings account from "date of marriage – current"
Mortgage account statement
Joint Credit card copies
Joint ownership of assets:
House Deed
Joint Car title
Utility bills:
Copies of joint utility bills in both our names sent to our home address (electricity,water,gas,internet,cable)

Excellent list. Make sure that credit card statements, utility bills and monthly insurance statements all span from the time of your marriage to your time of filing as well. Do you have a family cell phone plan?

Even though my wife has a joint credit card, she hardly uses it, and I use my own, so I will just send in the copies of the two cards.

My work provides me with a cell phone, so we dont need a family plan ;)

Yes, and I will make sure that our joint checking/savings account, which we use the most, spans from date of marriage to current :)

Anything I should be adding to the list?

I can think of making Wills and/or Medical Powers of Attorney, apparently pretty heavy evidence-wise, although I don't see the need since your other evidence is pretty strong.

Thanks, I dont think we will include wills and/or medical POA, we were just hoping to make sure, we have something strong in each category, they ask evidence for and whether we haven't missed out anything

Even if you dont include wills, you should get some done. They're pretty important to have once you start to have some assets.
