If the petitioner made JUST above the 125% poverty guidelines for the 1-134 would be in the clear for approval? Or should we get a co sponsor just in case??

In his current job however he is making way more than necessary but in 2015 it was just above as he was still a student.

Also, when does the poverty guidelines change again in 2016? If my interview is mid March I'm afraid it goes up like $200

Also- For the I-134 isn't it supposed to be only above 100%? Or do embassies look more like the 125%?

125% in support of a K1 petition.

Current and continuing income is what is most important (unless self employed). Recent paystubs and an employer letter are good evidence to support the present income claim.
