My fiance and I filled our or paperwork for the k1 packet in September of 2015. Life got in the way and I haven't sent it in. I'm planning on sending it in as soon as possible. Would it still be okay if it was dated in September?

They were only signed a few months ago. It is fine to still use them and send it in now.

Someone said that since it's the last month of the year that I have to redo them. Is that true? Or are they okay to send in if they are dated 09/30/2015

I have no idea what the last month of the year would have to do with anything. If you have the signed form and all required supporting forms and documents, then just send it. No need to redo all the forms/documents with updated signature and date. They are not really time sensitive. If you were asking about the K-1 visa interview process and proving the I-134, then I would say to provide updated current income info, but this is the I-129F petition submission. It doesn't require anything of that nature. You signed the documents in Sept. Your signature and fhe documents have not expired.
