Assuming you go to the interview and you get an RFE for something, but you are able to mail in the documentation immediately, how long will it typically take for US Embassy in Manila to review the documentation and clear the item and approve the visa?

I am asking because there is a slight to medium likelihood that one of the police clearances requested by my fiancee will not reach her by the time her interview date comes up. In addition, I've noticed that they seem to not have opened up any dates in 2016 for interview booking at this time.

First, no one can say with any certainty how much time it will take USEM to process your RFE. Usually, it takes 2-3 weeks after they receive the PC, but can't no one can say for sure.

The information I found states - within a reasonable time frame. (whatever that is. ) I know of cases dragging on for upwards of a year. I know of a few other cases where they were waiting for the police certificate and there were no issues with the delays. Do keep track of the date of your medical as the visa validity is tied to that date, if too long a delay you may have to complete a 2nd medical.

I don't expect to see January dates to open up until the middle of December.

The OP was asking about time frame for THEM responding to the 221g. ;)

Sorry for the confusion in my question guys. Actually, Greenbaum is correct, as I was asking about how long it would take USEM to process my request.

I am worried that I will not have all documentation by the interview date, but I have no concerns about sending in the documents after my interview (probably within 1 week after my interview if not earlier). I just wanted to know whether this RFE would delay my visa issuance (i.e., how long will it take for USEM to process the documents).

It sounds like 2-3 weeks is the norm then? That is acceptable, but it would be terrible if the processing time were months instead of weeks.
