And just wanted to know what you think/if I should be all set. :) Thanks.

My fiance is from Canada.

I have...

*Check for $340

*Cover letter

*Form I-129F with attachment about how we met

*Letter of intent from me

*Letter of intent from fiance

*G-325A form filled out by me

*Passport photo of me

*G-325A form filled out by fiance

*Passport photo of fiance

*My birth certificate front and back, and also all pages from my passport because I am not sure if I have the long form birth certificate or not

*Proof that we met within the past two years: copies of all my boarding passes and itineraries from visiting her, eight pictures of us together, bank statements (I highlighted where I spent money in Canada)

*Other proof: copies of cards/letters to each other, six total

*E-notification form

Am I missing anything?! Also, is that enough evidence?

Thank you!

Do you have your fiance's birth certificate and passport?

I have mine; I'm the petitioner. I was fairly 100% certain we don't need hers for the petition???

I think you're right. I included them for my fiance to be safe in my package, but she's not from Canada. The only other things I can think of are to ensure that your letters of intent and forms G-325A have original wet-ink signatures. You may wish to include some more relationship evidence, but what you have so far will definitely be enough to get through USCIS and to the interview.
