Also, for proof that we have an ongoing relationship, I used screenshots from facebook posts we have tagged eachother in. For example if she misses me she has posted "I miss you babe", stuff like that. Will that work? Because we use whatsapp and facebook messanger to talk, we have no actual mailed letters for proof. Also, I could not find my flight itinerary for my second trip to Brasil, but I could find my hotel reservations and car rental stuff, will that suffice?

The most important evidence you need for the I-129F is proof of meeting in the last 2 years. It lists what evidence of this to send in the guide here on VJ > http://www.visajourney.com/content/k1guide

Copies of all airline boarding passes, train passes, itineraries, hotel receipts, passport stamps (make sure you can read the dates on the stamps), and other documentary evidence that you have met within the last two years.

The screenshots and other evidence of communication/relationship can be added in on top of that. That is 'front-loading' for the consulate to see before the K-1 interview. Those types of evidence are not required for the actual I-129F petition. Show a sampling of communications that spans your entire relationship.
