We will be getting the letter soon from the consulate soon. My question is with scheduling the interview date. Do they give you dates to choose from or you can pick an available date etc? What is the best why to go about scheduling?

You'll receive a letter with the interview date they've assigned to you. You can postpone the date if it doesn't work for you, but I'm not sure how that works.

are you sure about this? In Mexico you can schedule your interview date using their online system. In fact, they say you must schedule your interview that way.

Wrong. You must schedule your biometrics appointment using their online system however the actual interview in Juarez is scheduled for you, you will receive the interview letter with instructions and the date and time of your interview via email and snail mail.

for the K1 visa that state department website says you must pay the IV fee and then schedule an interview. I believe you are mistaken, as the information you assume is correct applies to the IR-1 visa.
