yes, but for a k-I fiancé visa an I-134 is needed at the interview. Later when the petitioner and beneficiary are married in the USA. They will have to do adjustment of status (AOS) and file the I-864 at that time for affidavit of support ( also abbreviated as AOS)

For a IR/CR-1 spousal visa, only the I-864 is needed and is sent to the NVC. The adjustment of status is done before the visa is approve so there is no need for adjustment of status later.

I just started (Jan 5, 2015) a normal, w2 pay stub income with an airline. High security, background check, etc. It is a permanent job.

So if your present income is sufficient, then you don't need a cosponsor.

to becoming a pay stub employee, then I should be OK.

Yes

But I am worried they might say I have only been in my new pay stub job for 2 months. Really, it should not matter how long I have this job, but some people think differently.

Nope, current income is all you need; there is no time limit.

So I thought a strong joint sponsor, my sister, might help the interviewer give the thumbs up.

You also might be shooting yourself in the foot if they deny the visa because you are using a cosponsor. If you don't need it, then don't use it. You don't get extra credit.

I also have a great resume, history, references and all that, but I guess that doesn't count in this case.

No affect.

Is my new job with adequate income going to be sufficient?

Yes

Phil (Lockport, near Chicago) and Alla (Lobnya, near Moscow)

As of Dec 7, 2009, now Zero miles apart (literally)!
