Hi again...............

Background to our situation: I'm in England (beneficiary), she's in USA (USC). I have a full-time job, savings and equity in a house that I intend to release prior to moving to America on a K1. The amount I have access to is way over the poverty level. She's in college and works part-time earning below the poverty level. We are hoping to avoid having to find a co-sponsor.

So when it comes up to interview timefor me and she has to fill in an I-134 with her income details and my savings/equity details, is it advisable for her to put "NONE" under her income to save the hassle of having to include all the supporting financial documents? Or will it be better for her to list her income even though the bulk of our pooled resources is coming from me??

You can self sponsor at the Consulate for a K1. You job is irrelevant unless they are continuing to employ you. The Capital requirement is small, a few thousand.

You may need a co-sponsor when you file to adjust status, - I-864.
