I am a US citizen, and my bride is from the Philippines. We live in Wisconsin, and will be getting married in Illinois tomorrow.

For some reason, I thought that after she entered the USA, that there was nothing to do for the marriage processes until after marriage. Now I see that we could have gotten a Social Security Card, and worked on updating her vaccinations. We'll get on that right away.

So, she will be changing her family name to mine.

So, how should she sign the Marriage Certificate? With her current family name or mine?

At this point, how exactly does the whole name-change thing work when we apply for the Social Security Card (since we will marry before applying for the card)?

Oh, while we are getting married tomorrow, her K1 visa expires on July 3rd. I hear we should have applied for a Social Security Card at least two weeks before that date--how should we proceed now?

She signs the Marriage license with her current family name aka her maiden name. Once the marriage license has been sent to the registry office you will get a marriage certificate in the mail. You will need to bring the mariage certificate to the SS office if you wish to apply for a SSN with her new married name. You will also need this marriage certficate for AOS. I am sure I have read that a photocopy is acceptable.

Your Marriage certificate can be used when your wife needs to apply for things in her new married name such as a drivers license.

You will need to apply for SSN when her EAD or Green Card arrives because you have missed the period (prior to 14 days of i94 expiry) to apply for SSN.

Again, to get a SSN in her married name you will need her passport and marriage certificate. They will look up her maiden name (the one on her visa) in the SAVE system - the marriage certificate verifies she can have her SSN in her new married name.
