How much supporting documentation should I take for the affidavit of support (k-1 visa)?

I've got the following for my interview:

  • DS-160 confirmation
  • Certified Copy of Handwritten and Typed Birth Certificate
  • Certified Copy of Name Deed Change for my dad and I
  • Police Certificate - No Trace
  • Updated Letter of Intent (to get married) from both my fiance and I.
  • I-134 Affidavit of Support

And 1 photocopy of the above too (also got 2 US passport photos) and my passport.

For the I-134 Affadvit of Support I've collected the following documents:

  • Letter from employer stating current salary (over $50k) and her promotion, also that she has been employed at the same place since 2007. She just got tenure (professor) so she can't get fired (says permanent position on the letter).
  • Letter of appointment for 2013-2014.
  • Letter of salary adjustment for 2013-2014
  • Paychecks October 2013 to May 2014
  • US Individual Tax Return for 2011, 2012, 2013
  • Retirement Fund for 2013
  • Bank Statements for November 2013 to April 2014 on both her bank accounts
  • Mortgage Statement for April 2014
  • Current Bank Balance for one of her 27 May 2014

Is that enough support or is something else needed? (The supporting documents total about 65 pages) I need to go photocopy the supporting documents.

Or is this overkill in supporting documents?

I also have a ton of flight itineraries and hotel bookings, and photos, etc... for proof of relationship. (Should I photocopy these too?)

If I give them all the stuff I have it will be over an 1 inch stack of paper.

Our baby is due soon, so I don't want to screw this up.

It looks like you have it all. they will not ask for much. She took a ton of back up info and none of it was asked for.

Overkill by a lot. They would approve on the employer letter alone. Really!

Overkill as already mentioned in answer to your other thread.

Photocopying. Grasp the concept here:

The embassy needs one document for the file (not duplicates). So yes they need to see originals (or certified) of things like birth certificate, deed poll. So if you want the original back, then provide a photocopy for them to put in the file and they will hand back the original before you leave.

Things like tax returns or paystubs are fine as photocopies, so no need to give them two photocopies. If you need something back, provide a photocopy. If you don't need it back (because you have a copy elsewhere), then no need to give them an additional photocopy. So following from that---you probably saved a copy of the I-134 on the computer. Right? So give them the original signed one but don't hand them a photocopy of it too. They only need the original and if you need to look at it again, look at the one saved on the computer. Make sense?

And the document collecting person will hand most of it back to you. The actual interviewer will never see it.

It is so much easier than you are imagining. Your interview will not consist of you working hard to convince them of anything. They have to collect the documents you mentioned first in your post, and then the interviewer will ask a few chatty questions like "how did you meet?" or "where does she work?", then approve you. I seriously doubt if the interviewer even mentions the affidavit of support. It will be put in the file by the document collecting person, and the interviewer will glance at it but not discuss it.

Regarding the affadavit of support stuff, I took the form it's self and 2 tax transcripts, thats it.

All the flights info and what have you, I took none and none was asked for.

If you are going to take all that stuff then fine if it makes you feel better but keep all the additional stuff apart from that which is neccessary or you will end up with paper everywhere. You are stood at a window like buying a train ticket not sat down at a table and chairs.
