Change of mailing address during K-1 visa process - what to do?

We plan to send out our petition in a month or so, and I've been reading as much as I can about the process. This site is so informative -- thank you to everyone who participates!

I am American and my fiance is French. We currently live together in San Francisco. He is currently in the US on a J-1 visa which ends mid-September. Our (hopeful) timeline looks a bit like this:

late June / early July - Mail form I-129F

between then & Sept - Hopefully receive NOA1 & NOA2 before leaving for France

late September - Move out of current apartment & go to France for ~6 months together

October to March - Be in France; hopefully go through & complete the process for a K-1

sometime in March - Return to the US & look for new apartment

soon after that - Get married and so on

My main concern is that when we leave San Francisco and go to France for 6 months I won't have a permanent mailing address here in the US. I know there are numerous other notifications between receiving the NOA2 and actually receiving the visa, but do any of them require having a permanent address and being present at the address (ie. requiring quick action on my part)? Of course I will forward my mail to a trusted family member, but is that okay / good enough if the forwarding process is slow or if a notification is lost in the process?
