I have tried to find a checklist on here for an i-130 & i-485 as I am about to send both my parents application in.

I also do not know if I need to submit a G-325 for myself as I am the petitioner of my parents?

I have found the checklist for spouse but not parents.

If it is the same filing process for parents as it is for a spouse...then yes you will have to complete a G-325 for you and include passports style photos

I think I have figured I need to send form G-325a for myself the petitioner how many copies do I need to send? 1 for each of my parents applications?

do my parents fill in G-325a or just G-325?
