Fiancé, visit, home, country, long, wait

I'm waiting on my petition for my finances k1 visa. My question is after we marry, will she be able to return home to visit her family or will there be a long period where she cannot? I heard somewhere that there is a two year waiting period where she can't leave the USA.

She will not need to wait two years. You need to file for AOS after you marry and at the same time you can request AP, which would allow for travel. It may be a period of a few months that she can't travel, but not two years.
