Happy Veterans Day everyone.

I just have one quick question and I wonder if anyone could share there insight.

Due to my line of work, I happen to travel a lot outside the U.S. and during January we are thinking my wife will have her AOS appointment (data estimate).

I will be away a month (January-February) and I would like to know if my absence could severely damage her changes of being approved by her case officer?

Quite likely. Your presence (USC petitioner) is required at your wife's (beneficiary) AOS interview. The AOS application may be denied is you are not in attendance. There may be allowances made for active military.

Maybe you will be lucky and be selected for an interview waver.

You must attend with your wife. If you are called an interview and you will not be in the country at that time, then your interview will need to be rescheduled, or better yet, you would need to find a way to fly back to the US just to attend the interview. Rescheduling is a pain. You have to call, send a letter in the mail to your local USCIS office and go in person to an infopass appointment to make sure you get confirmation of the cancellation. Then they can take their dear sweet time to give you a new interview appointment date. As A&B said, maybe you will get lucky and not have an interview at all.
