One more question on I-134 form. The instructions state; "Submit in duplicate evidence of income and resources, as appropriate." So do they really want TWO copies of all supporting documents? Seems odd.

You can ignore the instructions on the I-134 in that regard. Follow the instructions in the embassy instructions letter; they ask for A copy of your most recent tax return & W-2.
