For what stage, uscis, nvc, interview? Uscis doesn't want anything but plain copies of your documents, NVC wants originals or certified copies, certified by the issuing authority, not a justice of the peace or anyone else. Interview, take every original you have left and copies of all you've sent to each the uscis and nvc plus any other evidence you may have.

W/o knowing what you need them for, it's hard for anyone to tell you the correct answer.

For your I-130 Packet: Only normal copies are needed, you can do them yourself at staples/office depot, etc

For NVC: You need originals or certified copies from the issuing agency.

For Taxes/ITIN: I don't know why the person above said don't bother. For passport, yes, you need the copy from the issuing agency and it works just fine.
