Going to be submitting both tomorrow and want to know if I should be filing by email or online (electronic) to quicken the process????

If you didn't optin for EP yet and are sending the packages tomorrow, then you have no choice but to snail mail them.

For Canada, keep in mind, you need to do the DS-260 form online. It's required for Canadians.
