I have been under contract working in China for the last 5 years. My fiance and I are planning on moving to the US after she gets approved for her K-1 visa. Her interview is scheduled for July, so I'm expecting us to move back to the US in August.

Presently my contract in China ends on June 30th. I have a new job in the US beginning on July 1st at a family-run business. The job is mostly online in nature allowing me to work from home. By the time of the interview I would only have one pay stub from this new job. I would also have a letter of employment. Is this enough proof? Should I show proof from my previous position as well even though I am no longer employed by them at the time of the interview? Would it be suspicious that the new job is with a family-run business?

I think you should be alright as long as you get that letter stating how much you will be paid and that the job is permanent, include the paystub, and as long as you were over the poverty level with your previous job (I would have tax transcripts or returns and W-2s showing that). But maybe others who went through the process in China can help shed more light on this.

When you file for the AOS, you will have more paystubs to back up your job.

When my fiance had his interview, they did not even look at the pay stubs that I had provided. They took the affidavit of support and the letter from my employer. Just be sure you are well above the poverty line and you should be fine! Oh- and I also provided my previous year's tax returns that they were more interested in than my pay stubs. Just an FYI.
