my fiance and i met while he was working in the country on a J1 visa for 18 months. do you think that this will help our case go through faster and my evidence did not contain a whole lot of emails and things because we were here in person for so long. i sent like airline tickets from a trip we took together a pic, two pay stubs to show we worked at the same place at the same time and engagement ring receipt. and a couple of movie tickets we saw together. do you think i should have sent more that this should be alright??? has anyone else filed a K1 petition coming off another visa???

It's not going to speed your petition up, but it's good evidence as long as part of it was within the last two years... just make sure that you explain that she was here on the J1 visa etc. :) and good luck!
