MY fiance (who is petitioning me to come to the usa) just got a new job, do we need to notify the USCIS that his employment has changed? I'm sure this happens often? or what if one is to become unemployed while the I129F is going through, will that effect anything?

No you don't. You will have all the current information for the interview and then again at AOS.

It affects the affidavit of support. And no you do not need to notify anyone.

You just fill out the forms with the new job when the interview comes and you submit the affidavit of support.

Your I-129f was approved in 5 days from your NOA1 date.

Your interview took 67 days from your I-129F NOA1 date.

AOS was approved in 2 months and 8 days without interview.

ROC was approved in 3 months and 2 days without interview.
