One more question, I thought it best to create a separate thread.

I want to use a co-sponsor for my I-134 because I don't want to take any chances. My parents are more than happy to co-sponsor my fiancée, but they are retired.

They have typical retirement income and assets, but will that present a problem for us if they are no longer employed?

Should be fine, assuming your local US embassy allows co-sponsors for fiance visas. If the parents are very very old, the CO may hesitate as if they die (sorry to be so morbid), the affadavit will stop.

Me: Irish/ Swiss citizen, and now naturalised US citizen. Husband: USC; twin babies born Feb 08 in Ireland and a daughter in Feb 2010 in Arkansas who are all joint Irish/ USC. Did DCF (IR1) in 6 weeks via the Dublin, Ireland embassy and now living in Arkansas.
