what happens if i go ahead and send in our paper work for the K-1 visa and i go and visit my fiance again while we are waiting for his interview??

There are no rules against visiting your fiance after submitting your K1 visa application for him. A visit probably helps to make a stronger case for proof of an ongoing relationship.

I visited my fiance 2 months after we submitted our K1 visa paperwork.

so im guessing that when i viist him he will keep all the reciepts and take them to his interview?

I gave him a copy of my itinerary and original boarding passes. We also took pictures together (with date stamps) and he will take them to his interview.

Take lots of pictures together, with his family in different places and basically document everything you do and everywhere you go like take pictures of places you visit, keep receipts from restaurants, museums, coffee shops, hotels, transportation... at least that is what I'm doing (Psycho here ) But you never know it might be helpful as evidence.

Don't forget to save all you boarding passes (Very Important) Since you can use them as evidence along with passport stamps and itinerary copy.
