Past income is only 100% necessary for self-employment income. Some consulates such as Manila do specifically request 1040/transcript of previous year regardless of being self-employed or employed. Providing past income can show that you have the stability of maintaining the amount necessary to be at or above the 125% level. If you are going to provide this, 3 years would be sufficient. What is most important and the determining factor of qualification is CURRENT income. The affidavit is for the purpose of current income, and the requirement for the visa is to be making an annualized income that is at or above the 125% level at the PRESENT time of the interview. Your pay stubs, letter of employment, and/or bank statements could all provide this information. You can provide anything else that you would like that might help your case.
