As long as your sponsorship and all the other sponsors together meet up the 125% poverty line together, I don't think so...

No, assets are optional if you want to use them to qualify. If you are using a co-sponsor the USC spouse still fills out the I-864 and sends in their proof of income/tax return and then the cosponsor does the same.
