I would weigh all our options, see which one best suits you and apply. If in the USA on a K1 and leave it is presumed you abandoned the Visa and must start over.

If their plan is to move back to Europe right after the wedding, I wouldn't recommend the K-1 route. It is expensive, time-consuming, and not required. Foreigners get married in the US all the time without any visas, provided that they go back home and don't try to immigrate. Also, if they AOS and leave right after receiving the AP, they need to bear in mind that they may have to come back for the interview. Not to mention the fact that LIVING abroad is exactly the opposite of what they are trying to do, i.e. obtaining a legal PERMANENT RESIDENT permit.

Yes you can, she just cannot return. You would have to start a new I-130 petition in order for her to come back. It currently takes 10-12 months to process.

You could also wait until after you have lived there for 6 months (you must be legally present in the country) and file for a DCF which goes much faster. That would probably be your best bet to time it as close to 6 months as possible

You can LEAVE any time, but with a K-1 you cannot enter, get married, leave and RETURN. Leaving is never a problem.

Very good point! I should have been more clear. You will be free to leave, returning will be the problem!
