Never hurts to be organized. I'm sure the interviewing officer appreciates not having to sit there while you dig through a bunch of papers to find a document they have requested.

Same applies to the packets you submit to USCIS. Having the packet organized and marked so documents can be easily located helps to make sure you don't get an RFE for something that was there.
