(VJ doesn't allow me to edit my previous posts, so I'm adding here...)

To be more specific, we have not send in any of the paperwork yet, so there is still time to make then change if that is recommended. However, the marriage licence is in my maiden name, because in Nevada where we got married, name changes are not made simultaneously. So, if I do use my not-yet-official-married name on the i-130 form it will not be recorded or proven anywhere and probably won't be for at least another month before I can get the paperwork to Denmark.

What should I do?

Yes, use your married name, even if not yet officially changed. All marriage licenses are issued in the current name as they are issued prior to marriage. No worries there. What is important is your marriage certificate. It will generally also state the name you gave on the marriage license.

Are you sure you need to register the marriage when you're still a resident of DK?

Here's a little copy/paste: "(...) bopæl i Danmark og indgår ægteskab i udlandet, kan I ikke få jeres ægtefælles efternavn i forbindelse med vielsen. I stedet skal I efter vielsen henvende jer til jeres bopælssogn/kirkekontor, hvor navneændringen kan foretages." Then all you need is proof of it, and take it to your current parish/pastor(bopælssogn). When you choose country, US is an exception regarding legalization of documents.

You could try to either set up an appointment, call or email your pastor regarding these questions. Mine was awfully helpful and I didn't exactly go to church every Sunday(or year). I mostly knew of her because she has one of my puppies :) Ahremm..

After you get your new legal name change, then you can change it with CPR and the passport as well.

I'm sorry about the Danish, I know this is not in the regional forum but I reckon it's better not to translate when it's specific to Sirupy Tuna's situation.

No matter what, please come back and add your experience. We're not many Danes on VJ but it might be useful for some later on:)
