An updated letter of intent to marry (like the one sent with the original petition, just with a date closer to your interview) will suffice for evidence of engagement.

OK thank you but then for the interview they ask the letter of intent, so do I just make 2 copies of it, send one now with packet 3 then the other keep it for the interview? thanks again

You don't send the letter of intent with packet 3, that goes to the interview with you. All that you send in packet 3 is the signed checklist with X's on the lines of things you will provide. And the forms that you filled out. DO NOT send anything else. Your photos, criminal record check etc all goes with you to the interview.

evidence of engagement can be:

emails, calls logs, phone bills

pictures together, meeting in person

If you got paperwork for an engagement ring/appraisal/etc - bring that too.
