K1 Visa approved! Longer than expected processing time in Guangzhou

My fiance was given verbal approval for her K1 visa on 1/25/11 at the consulates office in Guangzhou. She stayed in town for a couple days after the interview as the typical processing time has been only been a couple of days (per feedback from other members). It has now been over two weeks and the only feedback I can obtain from the consultes office is that it is still being processed and to be patient. I realize that they were closed over the holidays, but the wait time seems unusually long. Any sugestions on either escalating or getting a definitive answer on when it would be ready for pickup?

Is now a US Citizen immigration completed Jan 12, 2012.
