I-864 request for initial evidence

Recently, me (US citizen) and my wife filed for her adjustment of status (end of June). We filed the I-485, I-765, and the I-131 together. However today we seemed to have run into a snag with the I-864. We got a Request for Initial Evidence requiring some more information regarding my income.

My situation is this: I have been a student for the past 5 years in both medical school and public health. I recently started my residency (on July 1st) and have only gotten one pay check so far. Before this, I had no taxable income for the past 5 years as I was living on loan money. We filed for I-485 before I began my residency, so I did not have any income then...but I did include my offer letter from my residency program and an explanation as to what my situation was. So my question is what should I send them? I will have 2 pay stubs as of this Friday. Is that enough? Is a letter from my residency program enough verifying my employment for the next several years? (My income is above the 125% threshold.) I am a bit panicked, but I don't want to mess anything up.

Furthermore, I could get my father to be a sponsor. However, I have already sent in the original I-864. Would he have to fill out a separate one, and would he have to pay a fee to file it?
