Notarized copies of income tax forms???

I'm sorry to ask so many questions.......but can't find the answer. On the UK's American consulate site it says that:

To substantiate the information regarding income and resources the sponsor should attached two or more of the following items to the affidavit.

* notarized copies of his or her latest federal income tax return;

* a statement from his or her employer showing salary and the length and permanency of employment;

* a statement from an officer of a bank regarding his or her account, the date the account was opened and the present balance;

* any other evidence adequate to establish financial ability to carry out his or her undertaking toward the applicant for what might be an indefinite period of time.

So my question is first of all, how do we get notarized copies of our latest income tax? Does it just mean that a notary stamps them???? Ok, then my second question is which of these evidences did you provide that they accepted? We just want to make sure and get this right the first time. Thanks so much for your help!!!!!

We used:

Transcripts of my tax returns. Not notarized.

Paystubs from my job.

A letter from my employer

A letter from my bank which stated when I opened the account, that I was in good standing, and the average monthly balance.

I have also heard where some folks had a calendar year's worth of bank statements (if they had trouble getting a letter from their bank).

I have given my fiancee

Copies of last years tax returns (not notorized)

Letter from employer

Print outs of my Leave and earnings statements for 3 months which show length of employment etc.

Copies of my military retirement yearly statement.

Letter from Bank

I would think that would be enough.

One question though. Does she need to give them two copies of each?
