We would like to leave the country for an extended period on Advance Parole right after our AOS interview. According to the timeline, if we are approved then the Green Card is likely to arrive in the mail about 11 days after the interivew. Is it necessary that we be home to receive this mailing and act on it right away? Or is it OK if a month or more goes by before we are here in the US to receive it?

You do not have to be home to receive the card since you don't have to sign for it. You can leave for the airport right after your interview since you have an AP. The card will be sitting in your mailbox when you get back home.
