If the child is born prior to coming to the US then you would report the birth at the embassy/consulate to obtain the baby's US passport.

Also household size would increase by one. That would increase the income requirements for the affidavit of support from the US citizen petitioner.

The child, if born before you come, will not be eligible for a visa, the child is eligible to be a US citizen (also a Canadian citizen, you can do both)

Congrats on the pregnancy Jules!

Montreal has faced a lot of backlog recently, meaning some have waited 4+ months to be granted an interview after their petition has been approved. However, in the last few days they have scheduled a number of people, so it seems as though the major backlog issues have cleared, at least for now. When I applied for our K-1 we filed with CSC and were interviewed in Montreal, just like you, and I had my visa in hand in less than 7 months. So it is quite possible you will be able to join your fiance in the US before the baby is born, if that's what you really want to do. But, just keep in mind that it will be rather close!
