Lisz, like I said in the other thread, you can always reschedule the interview if you don't have them with you. They don't frown on it. Someone else (I think Sarah) suggested that as soon as your fiance get the tax returns, he could fax them to you, so you could have the faxed copies with you. If that's possible, you could call the consulate again and ask if it's okay to submit the copies you'll get in the mail a bit after the interview.
