So, I've sent all chat messages, emails, phone records up till the end of July. Fiancee's interview is the 17th of this month. Do I have to send her phone records and emails for the first two weeks of August to show that we're still communicating?

It'll take about four days via USPS Express and it's quite expensive just to mail about three pages of phone records. Are we ok with just records from January to July?

You should be good with what you have sent. The consulate understands there is a lag in mail and will surely not need a few weeks extra.
