Thanks for your input everyone and for the practical advice.

We're going to move to the US as soon as the K1 is approved for travel. It's not ideal financially but sounds like the safest option.

Well that's definitely the safest option, and really sounds like the only good one unless you cancel your August wedding and change it to happen in January. Like others said, you can easily call the embassy and postpone your interview and then once you have the interview your visa will still be good for 6 months later. Really, that seems like the best option to me. Think about it, how much money will YOU make in France between July and December??? How much money will your fiance make in France between July and December?? Is this amount of money more than you'll lose on canceling your wedding deposit??? My bet is that yes, it is more! Unless you have a job waiting for you in the US then with the state of things right now it might take a while (AT LEAST a month if we are being realistic) for you, the american, to find a job. And it'll take at least 3-5 months for your non-american fiance to get a job (IF YOU ARE LUCKY!).

Taking all of that into consideration, would you really be losing so much money to postpone the wedding and lose the deposit?? Take it from me, I canceled my wedding 30 days before we were scheduled to walk down the aisle (see below signature) and while I lost about $1500, I haven't ever regretted it for a second.
