Looking at all the guides and such, I am having alot of trouble deciding the importance of the Social Security Number with the K-1 Visa.

My fiancee is already here in the States on her K-1, and we are getting married on the 25th. She does not plan on working for a while, and we already have the marriage license. So, my question is, how important is the SSN to AoS? We plan on filing AoS as soon as we can after we are married. As far as the SSN is concerned, I would almost rather wait at this point till after we are married, so we can just get it in her married name. However, all the guides seem to suggest getting the SSN before the wedding.

What exactly is the SSN's effect on the entire AoS process?

No effect at all. No need one for AOS.

Right, you can get AOS without it.

Reason to have it:

Opening a bank account

Filing for taxes jointly

Use in applying for driver's license?? Perhaps, depends on your state

So many places ask you for it like credit card companies, doctor offices. Simplifies things to have a number instead of explaining status.

Your number is your number for life, no matter what name is on the card. Change name at your leisure.

It's free and should be easy if you get it soon after entry. If you wait too close to the end of your 90 days then you can't get one. At that point you have to wait on USCIS to approve applications and you know how unpredictable that kind of timeline is.

It's really a matter of choice.

The SSN has no effect on the AOS process, you do not need an SSN for the AOS. However you may (probably will) need it to add her to the bank account. My wife applied for hers 16 hours after she landed and had it in hand one week later. Not for work, just for general purposes. She needed it for the bank and for a drivers license. She did take a "small job" at a mall over the holidays but she really didn't plan on working when she got the card. I would suggest you do it now.
