I just have a quick question.

My interview appointment is next Friday and I was wondering if I need my fiance's tax returns as well as our co sponsor's?

Or is a bank statement and a letter from their employer enough?

you also need both of your fiance and his co-sponsor's tax transcripts

my fiance has his for this year but our co-sponsor has not done them yet.

do you mean the tax return?

and can he fax them over?

You definitely need the most recent year tax return from both. It can be a copy with all schedules and attachemnts and w-2s or 1099 forms. Bank statements and employment letters are optional, tax returns are a "must" even though the instructions say it is only required for self employed, it is required in order for the consular officer to determine you will not "become a public charge" I can virtually guarantee your visa will not be approved without them. They can send them by Fedex to you.
