Okay so we filed for a K1 in september after my fiance was here for 3 months. I am wondering if it would be a problem if I went and stayed with my so in new zealand until we get the visa or less than 3 months for the waiver? I know you can get a delay if they come to the us too much or something like that but would it be a problem if I go see him?

Nope, unless NZ immigration has a problem with it. Him coming to the US won't slow down the process either. If he is denied entry, he will have to go home and I don't think he can use VWP (not sure though) but it won't slow down the process for you.
