Tocino

pork meat or chicken,babad mo lng sa sugar for 24hours.

Love tortang eggplant,guinisang ampalaya,pochero,pork binagoongan,laing,chicken adobo,pininyahang manok,chicken curry,ginataang barilyete,chopsuey with shrimp,chicken liver and pork.Good thing my fiancee loves filipino food especially my cook.Walang problem sa knya. :yes:

totoo ito. nung umuwi ako this past christmas season, i gained 5 pounds within the first week dahil super namiss ko yung food. ngayon, pag homesick ako, knakain ko yung tuyo na nasa bote with oil. malapit na nga maubos, so i foresee a trip to a filipino store soon. kahit malayo, papatusin ko.. :D

Hi guys,

Been here in US for 3 weeks already, and im quite adjusted with the environment, weather, time and sleeping pattern. i am really happy to be here with my sweety. anyway, i've been experimenting and trying to cook here to please my husband. :lol: im not really a good cook :huh2: , but he liked every Filipino dish I made :dance: sweeeet! :thumbs: . it reminds him of Philippines.

i cooked adobo, menudo, pancit canton, tocino, and caldereta.

Any suggestion of other Filipino dishes? :help::pop:

i bought itlog ng pugo in an asian store. lastnight we went fishing at lake and my husband asked me to cook those pugo and give it to his friends. :lol: gosh! for them itlog ng pugo is so weird. :huh: i told them about "balut" too, my husband loves it :luv: , and their reaction is yuuuuck. :wacko: hahaha.. :lol: namiss ko na din ang balut. funny lang kasi may road sign sila "duck crossing" :blink: . wala sa pinas yan... hahaha. pulutan na silang lahat. :rofl:

I've asked a friend of mine the ingredients of his BBQ marinade, but he guards it like it's the Colonels Sanders receipe for KFC. I know ingredients can be added to personal taste, but what are the main ingredients of typical Filipino BBQ marinade?

here's the basic ingredients:

Soy Sauce

Vinegar

kalamansi(or lime)

sugar

garlic

Just mix them together and there you go you have your marinate sauce for the bbq :)

ketsup, kalamansi/lemon, paminta durog, asin, toyo, binayong bawang at ang pinakasikret na sangkap ay "3 heaping teaspoon of PLANKTON" (for those who watch Spongebob can relate)... kidding aside SPRITE/7-UP ang nilalagay ko... adjust to your taste... it should be matamis na medyo maasim... marinate mo ng at least 6 hours and tsadaaa.... yummy bbq...

may sikret rin sa pag-iihaw... gusto mo malaman? sa susunod na kabanata po...

Actually meron na nabibili na mama sita na ready to mix na.. I just dont know if they have it in Krogers or any supermarket in the US.. But try to go to asian market near your place.

Pero eto pa rin ang recipe..

MARINADE:

1 cup apple cider vinegar

1/2 cup soy sauce

3 cups brown sugar

3 Tablespoons salt

2 Tablespoons ground pepper

1 Tablespoon garlic powderMix all the ingredients and pour over thinly sliced, an eighth to a fourth of an inch thick, pork with a little marbling of fat. I used a two pound boneless boston butt roast and did not trim any of the fat away. Mix the meat so it is well covered with the marinade. Let it sit, covered, in the refrigerator for five days before cooking or freezing.

I usually bag small (quart sized ziplock bags ) portions, enough for breakfast for two or four people, and freeze it.

COOK:

To cook tocino, place desired amount of marinated meat in a small skillet with a cover. Do not put additional water. The marinade that is still on the meat plus it’s own moisture will be enough to cook the meat. And since you presumably used a cut with a marbling of fat, you don’t need to add oil either. Put over medium heat and cover. Let it cook until all the liquid has evaporated and the tocino starts to sizzle. Keep stirring to keep it from burning. Cook until it has caramelized and brownish red in color.

If you’re using a frozen packet, put it in the skillet and start out with low heat. When the meat has defrosted and separated, turn the heat up to medium and cook as above.

But try to learn also the american food, you can try by using this site.. Just find a recipe with simple ingredients..like Meatloaf, Spaghetti, so your husband will be more happy.. Darating kasi ang time , he will get bored on Filipino foods, so you have to alternate the foods you are preparing.. My husband is from Texas as well.. near by Dallas area..

I didn't really cook in Philippines a lot in the Phils and did ocassional cooking only! I miss Filipino food and I've been cooking my own dishes but it still taste different hahaha. I miss Phil mangoes coz the green mangoes here aren't sour and their ripe mangoes taste funny!
