I've never been a fan of ackee and saltfish.... either part of it! But... when with the mother-in-law, I'll eat it!

For those looking to cut carbs, may I highly recommend almond meal/flour as a substitute for regular flour in recipes. I've been experimenting with different different almond meal recipes and really like the two below. Add berries & whipped cream on the pound cake. Add berries to the mix for the pancakes, and it becomes even more delicious.

Almond Pound Cake

Almond Pancakes

I buy almond meal at Central Market, but if you're outside of Texas, check Whole Foods.

I added almond extract and sliced almonds (and walnuts) to the almond pound cake, so it definitely did.

The pancakes didn't really taste like almonds, cause I put strawberries in them, so I tasted mainly the strawberries.
