My situation is that currently I'm an F-1 status visa. My wife is a US citizen and we're beginning the Green Card filing.

Question is for form I-864, my wife has to prove that her income is 125 percent above poverty line, which it isn't. However, it also states in the form that she can use the income of the intending immigrant (me) to supplement it. My question is as a proof of income can I have a signed letter from my father that he is going to support me financially up to $15,000 a year so we can meet the required condition? My father is not a US citizen.

What the form is saying is if the intending immigrant is living in the USA on a work auth visa, the intending immigrant can file I-864A as member of sponsoring US citizen's household.

Your father's sponsorship probably will not work. A sponsor must be a U.S. citizen or have lawful permanent residence (green card) to be accepted, and then produce income tax and bank records to prove the ability to sponsor. Who sponsored you successfully for the K-1?

They are F-1, which is a student visa, NOT K-1

In this case get a JOINT-Sponsor.

OOPs.....but an F-1 also requires evidence of ability to provide for ones' self while in the U.S. Who provided that in this case?

In the case of F-1 support can be provided by foreign citizen, this is not the case for an IMMIGRANT using I-864.

financial evidence that shows you or your parents who are sponsoring you have sufficient funds to cover your tuition and living expenses during the period of your intended study. For example, if you or your sponsor is a salaried employee, please bring income tax documents and original bank books and/or statements. If you or your sponsor own a business, please bring business registration, licenses, etc., and tax documents, as well as original bank books and/or statements.
