Preferable, yes. But many people work for a living and don't have the time to spend proving the bread.

Marilyn ~ I agree that using the machine to make the dough and then sticking it is the oven is wonderful! But, if you're busy then leaving it in the bread maker is fine too. You just have to make sure you use it in the same day as it doesn't keep very long. However, you can always use the loaf as a weapon should someone break into your house!

In the UK I used to make Granary loaves, but I've been unable to find the equivalent flour over here in IN.

I recognize that at this point I will suck at kneading... therefore my choice in looking specifically for a breadmaker.

I read there is special kind of flour that can be used?

We have a Breadman Ultimate, it works great. We've had it for about 3 1/2 years now.

If you'd like some nice "artisan" knead-less bread to bake in a dutch oven Mother Earth News has an awesome one.
