First of all: congrats on your love coming home! :)

Second, thank you for the information. He's from Windsor so we thought he could do an interview in the US but I guess it makes sense for interviews to be held in someone's current country of residence. Sorry to be dense again but does it have to be the closest one to him (Montreal) or is Vancouver fine too?

Whichever embassy in Canada you put on the paperwork is where the interview will be as that's where the your paperwork goes after USCIS approval!

K1 denied, K3/K4, CR-1/CR-2, AOS, ROC, Adoption, US citizenship and dual citizenship

!! ALL PAU!

That is not true.

NVC automatically directs Canadians K-1s to their correct consulate, which may or may not be the one listed on your paperwork. I say that because 1) sometimes NVC makes mistakes and sends petitions to the wrong one (this happens very infrequently), and 2) many people don't realize that even though they may have a consulate in their area (and that is the consulate they put on their paperwork) only two US consulates in Canada deal with fiance/spousal visas.

Montreal deals with from Ontario eastwards, Vancouver deals with Manitoba westward (including Yukon and NWT).

Since your fiance is from Windsor, he will be dealing with Montreal.

Oh gosh. Apparently he's heard horror stories about dealing with Montreal, hopefully ours won't take forever.
